DOS GATOS

Founded in 2009, Dos Gatos Kolache Bakery has built a loyal following through its fresh, Czech style kolaches and locally roasted coffee, served daily across its locations in San Marcos and New Braunfels. As the brand continued to grow, the client sought to establish a more cohesive identity across all locations while preserving the authenticity and community-driven spirit that define the Dos Gatos experience.

In collaboration with Assemble+Co Architects, our team was brought on to help translate the bakery’s refined new branding into a physical environment for their new San Marcos location, the first space to embody this updated vision. Drawing inspiration from the brand’s evolving identity, local context, and the client’s vision for the future, the design creates an atmosphere that feels polished, approachable, and deeply connected to the character of Dos Gatos.
